This handcrafted Oroshigane (Japanese grater) by Ooya Seisakusho showcases the timeless beauty and precision of traditional Japanese metalwork.
Made from solid copper with a soft, natural sheen, it features razor-sharp teeth that finely cut vegetable fibers instead of crushing them. The result is a light, fluffy texture—like fresh snow—perfect for daikon radish, apples, or ginger.
Each grater is individually hand-forged using Edo-period techniques, where a skilled craftsman strikes each tooth by hand with a tagane (chisel) and hammer.
These minute variations in height and spacing allow for smooth, effortless grating without needing to constantly adjust the ingredient’s direction.
The surface is tin-plated (suzumeki) for smoothness and corrosion resistance, while the copper handle gives a warm, comfortable grip. Over time, the copper develops a beautiful patina that becomes richer with use, blending naturally into daily life.
Highly durable and repairable through re-sharpening (metate), this grater is built to last for generations. Whether used for dressings, sauces, soups, or traditional Japanese dishes, it brings out the true flavor and texture of your ingredients.
