This handcrafted Oroshigane (Japanese grater) by Ooya Seisakusho features a soft copper sheen and razor-sharp teeth that finely cut fibers rather than tearing them.
The result is a light, airy texture—like freshly fallen snow—that brings out the natural sweetness and moisture of daikon radish and other vegetables.
Each grater is meticulously hand-forged in Saitama, Japan, following traditional Edo-period techniques.
Skilled artisans raise each tooth individually by striking a hard copper plate with a tagane (chisel) and hammer, creating subtle variations in angle and height. These micro-irregularities make grating smoother and more efficient, as the surface catches ingredients evenly without constant repositioning.
The grating surface is finished with a tin coating (suzumeki) for smoothness and corrosion resistance, while the handle retains the warm hue of pure copper.

Care Instructions
